Everyone has a recipe they make more than pretty much everything else combined. Well for me, this blackberry crumb cake is it. It’s the sweet that works as a breakfast or dessert, and anytime there’s guests coming over, kids having a sleepover, or hubby just thinks it’s been far too long, I make this cake. It’s got a couple of parts to it, but honestly, it doesn’t get much simpler than this. You don’t even need a mixer!
I’ve had this recipe on my blog for years, but I’ve never gotten around to making a video. The main reason is that I make it at night most of the time, so it’s ready for breakfast (in that case I tend to skip the glaze, I know, the horror!). And, I just didn’t think it would make a terribly exciting video to watch. Sometimes after you’ve made a cake a thousand times, you just get in the groove, and whip it up so fast there’s no time to even snap and photo.
This recipe also makes A-mazing muffins. I use a non stick muffin tray and make 12, or I grab those larger parchment cupcake liners and make 9 large ones. Just bake them for 20-25 minutes. They are perfect re-heated in the microwave for 15 seconds, and perfect as a snack on the go. A little messy with the jam, and the crumble on top, but definitely worth any clothing stains you might get!
