Piping rosettes makes the perfect cake!
Well it didn’t take me long to go back to piping rosettes, I think I lasted a week or so of filming again, and that’s about it! I love my piping, and I love how simple it is to make just about the perfect cake. And this rosette cake is just the sweetest thing.
For this rosette cake I channeled all of my Dad’s favourite retro kitchenware and aprons, and basically all the things that make me think of baking in the 50’s. My Dad was a massive part of my childhood. He stayed home with me when I was little, and together we used to make chocolate truffles and White Wings cakes. He wasn’t a pro in the kitchen by any means, but he tried his best to make everything we did a lot of fun. I definitely had what people would call a “fun Dad”. He was always so encouraging, and positive that we could all be and do anything in this world. He gave me confidence when I had none, and we were never ever to old to cry on his shoulder or need a Dad hug.
I went up to visit his grave today; watering his plants up there gives me a good reason to go by. We found the perfect spot for him that’s not too far from a big old tree, and so far we’ve decorated his grave with bark chips and pots of plants. He was a huge gardener, and one of the things I miss the most is working in my yard with him. He taught me to mow the lawn, prune the trees, and prepare the soil for new plants. During these last few months I’ve found it bittersweet to see all our hard work continue to blossom, knowing that he won’t see it anymore. It’s a strangest things that are sometimes the hardest.

Getting back to the kitchen has been a long road. I don’t know that you realise just how tough grief can be to get through, until you lose someone like him. Someone that you can never forget, never replace, and never stop loving. It’s a process, and all I know right now is that baking is bringing me joy, and so I’m going to keep putting one foot in front of the other, I’m going to keep baking and sharing cakes, and over time things will get easier. I can’t thank everyone enough for all the incredibly sweet messages over the past few months. It’s been amazing.
Rosette Cake Materials
• Three 8″ round cake layers (Vanilla cake recipe baked in three pans for 27 mins – vanilla cake recipe )
• Sweet crusting American buttercream – sweet buttercream recipe
– 1.4kg blue – Americolor Electric Blue
– 250g pink – Sugarflair Pink
– 80g green – two parts Americolor Avocado and one part Americolor Mint Green
• Piping tips – #1M – blue, #21 – pink, #352 – green
• 3 Piping bags
• Angled spatula
