The cheesecake tart that is better than cake (I know!!)
Normally I’m not a massive fan of tarts. The idea of making my own tart case seemed daunting, and I find curd tarts to be just too tangy for my sweet sugary taste buds. But I’d had been wanting to make something more like a dessert and less like a cake, so I dived into the internet to look for inspiration, knowing I wanted to find something like a cheesecake tart. Pinterest is definitely a bakers friend!
I have made a marble dark and white chocolate tart before, but I wanted something that would look a bit prettier. I’ve been busily planting lots of annuals and gorgeous little flowers in my front garden, and I was excited to be able to use these lovely pansies to garnish whatever it was I made. I also didn’t really want to do a ganache tart. They are very rich, and even though I do love ganache, I thought there had to be more options. I stumbled upon a few using cream, mascarpone, or cream cheese. Just so has it that I had a block of Philly in the fridge, so that was settled. A cream cheese white chocolate blueberry tart it was.
I didn’t have any freeze dried-blueberry powder so I had to improvise and crush up some freeze-dried blueberries into a powder myself. I’m sure the colour would have been stronger if I’d used the powder, but I really love how sweet this turned out. It did darken in colour overnight, and the girls loved seeing how it looked better and tasted stronger the second day we had it. Yes, we fed this dessert to ourselves and our kids two days in a row. I know, parent fail again. But I think making your own sweets is still better for you than store bought, and we don’t have dessert every night, so in the grand scheme of things, I’m not too stressed.

Making your own tart case is not near as terrifying as I thought. In fact, it’s a really simple thing to do. But the result is something ten thousand times better than store bought. I’ll never buy a pie case again. The filling itself was heaven. On night two I couldn’t quite get through the last couple of bites, and my hubby took two seconds to look me up and down, exclaim “what’s wrong with you?”, and pinch it off my plate. Apparently it’s his new favourite recipe of mine of all time. I’m struggling to disagree with him. I’m truly a cake lover. My favourite ten desserts and sweets are probably 6 cakes in a row before anything else gets a look in. But the white chocolate, the cream cheese, and that amazing crust. I just was completely blown away.
So here’s my very first tart recipe. I give it a solid 9 1/2. It’s easy to make, it’s super fast, and throwing on some fresh berries just tipped it over the edge. I honestly can’t think of a single thing to improve it, except maybe using the freeze-dried powder. I will absolutely be making this in more flavours and maybe even trying other dairy products to see which truly is the best.
Hi! This tart looks delicious and since the weather is suppose to be great this weekend (hot) I would love to try it but where can we find freeze-dried blueberries?! In any grocery store? Could I replace by regular frozen blueberries?
