Piña Colada Cupcakes

Ingredients
Cupcakes
- 1 1/2 cups self-raising flour
- 3/4 cup all-purpose flour
- 1/2 cup desiccated coconut
- 250 grams (8.8oz) unsalted butter, softened
- 2 cups sugar
- 4 large eggs, at room temperature
- 1 cup (125mL) milk
- 125 grams (4.4oz) sour cream
- 6 drops Lorann Lime oil or 1 teaspoon lime extract
- rind of 1 lime
Buttercream Icing
- 250 grams (8.8oz) unsalted butter, softened
- 500 grams (1lb 1.6oz) icing (powdered) sugar
- 1/2 teaspoon lime extract or rind of half a lime
- 1/2 teaspoon coconut essence
Instructions
Cupcakes
- Preheat oven to 175C/ 350F degrees. Line two 12-cup muffin tins with cupcake papers.
- In a small bowl, combine the flours and desiccated coconut. Set aside.
- In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 2 minutes. Add the eggs, one at a time, beating well after each addition. Add lime extract. Add the dry ingredients in three parts, alternating with the milk and sour cream. With each addition, beat until the ingredients are incorporated but do not overbeat. Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended.
- Carefully spoon the batter into the cupcake liners, or fill using a piping bag, filling them about three-quarters full.
- Bake for 20-22 minutes, or until they spring back when pressed.
- Cool the cupcakes in the tins for 10 minutes. Remove from the tins and cool completely on a wire rack before icing.

- In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the icing sugar, one cup at a time, until well combined.
- Gradually add lime and coconut essence until combined.
