I love making breakfast. I love making it not at breakfast time even more. There’s something wonderful about making banana bread before going to bed, and waking up to it on a Sunday morning. It’s like someone stopped by a cafe, and grabbed you some breakie. Except you have to make it yourself, clean up the mess, chop it up, warm it up, and then make your own coffee. But hey, I’m a Mum, so I’m going to take this as the next best thing. Because really, I don’t think I could handle getting the tribe up and dressed that early, on the only day we don’t have to do any of that stuff. Plus, let’s be honest, you can’t eat out in your pj’s, so there’s a lot of upsides to making this bread really.
I’ve made this recipe for years, and the thing that I like most about it, is the fact you can adapt and adjust it as much as you like. I’ve made it for my Dad with low GI sugar. I’ve exchanged the milk for greek yogurt to add more protein. It make it rise a little less, but so so moist and rich. There’s only one egg, so you can replace it with a flax egg for those that can’t have eggs. The banana binds everything together to well, you really can do a lot. I’ve even added raspberries and 1/4 cup coconut for a delicious summer version.
Daylight savings has just ended this morning, but my body hasn’t adjusted yet. So I’m enjoying my coffee, having a lazy morning, and eating some amazing banana bread. Pretending for a little while, that I’m at some cafe with all the fancy people, but secretly enjoying just sitting on the back deck watching the day begin.
