My name is Brandi McAmmond. I am from Chilliwack, BC. Canada. I am a makeup artist of 12 years, photographer of 5 years and I have owned Hey, Sugar Cookie since May 2015 (not to mention, a mother of two). I started off my business only doing custom designed sugar cookies and eventually my ‘cake curiosity’ got the best of me in late November 2015.
At first I found myself on the fence about getting into caking, as there are so many amazing bakers around my area who do beautiful fondant cakes, I knew I needed to get creative and find a cake-niche! Cue in the ganache drip cakes! I saw a few photos and thought they were absolutely stunning, but it wasn’t until I watched a certain cakers YouTube video, (i.e Vanessa) of her take on the ever popular, Katherine Sabbath inspired cake. That video got me TOTALLY inspired to try it myself!!! As you could imagine, they are an absolute hit! I now have added the drip cake, or as I call them, Clutter Cakes, to my full time ‘menu’!
WHAT DID YOU MAKE FOR YOUR FIRST CAKE?
The first (clutter) cake I made, was for my nieces first birthday! It was a Devils food cake with purple frosting and a dark chocolate ganache drip. I was inspired by your video of the pink cake with the drip and buttercream roses! .. I added a Clutter of easily edible foods like baby cookies, pop tarts, cotton candy, peanut butter sandwich crackers and of course, buttercream roses It was her cake smash, cake !
DID YOU KNOW ANY CAKE DECORATORS BEFORE YOU STARTED?
A couple, yes! Most of whom, were self taught and worked mostly with fondant.
WHAT DID YOU WANT TO BE AS A TEENAGER?
I have always been one of those people who wants to try everything! So as a teenager, I had a few choice career paths, such as a makeup artist, illustrator, and children book author. But my number one choice was Fashion designer! I had it all planned and even a company name picked out (Ass n’ Gear hahahah).
HOW LONG DOES IT TAKE YOU TO MAKE THE AVERAGE CAKE?
Each cake totally varies in time (as I’m sure you know). But if I had to say a time frame, without baking, just straight decorating, probably around 3 hours …. it’s quite the creative process, and sometimes my perfectionism gets the best of me and I end up second guessing my creativity. That can be quite time consuming hahahaha
IF YOU COULD GIVE YOURSELF ONE PIECE OF ADVICE, WHEN YOU WERE STARTING OUT, WHAT WOULD IT BE?
Although I only started on cakes about 3 months ago, the advice I would give to myself would be to start sooner. JUST DO IT!
WHAT’S THE ONE STYLE OF CAKE YOU ARE MOST EXCITED TO TRY?
I am probably most excited/ anxious to try a 2-3 tier cake. I have never done one, and what’s better than a Clutter Cake? ..even more Clutter Cake!
IF YOU HAD TO GIVE UP CHOCOLATE, HOW MANY DAYS WOULD YOU LAST?
As long as it took me to remove the package off the next chocolate bar ! Hahah… baking cakes and cookies all the time, have turned me off of cookies and candy … but Chocolate, on the other hand, can never be replaced.
WHO IS THE ONE DECORATOR, YOU WOULD JUST LOVE TO SPEND THE DAY WITH, JUST TO WATCH THEM WORK?
This is a tough one… there are a few different cake decorators for a few different reasons! In no particular order, I would have to say …Katherine Sabbath – I would think, for obvious reasons. haha. She has really paved the way for these bright fun ganache drip cakes! Cakes by Cliff – I adore his work ethic! He works full time plus has built his amazing cake empire in ONE YEAR. And last but not least – Vanessa from Cake Style – and I swear I am not sucking up! I definitely feel like I could learn a thing or two from watching you work… technically I already have by watching your YouTube videos, but there is nothing quite like personally seeing an artist in their element!
* on a slightly related note, I have come to realize that Australia produces some AMAZING cake decorators.
